This strawberry shortcake tiramisu brings together fresh fruit and creamy layers for a nobake dessert that feels special yet easy to make. It combines the lightness of whipped cream with the zing of orange juice and the sweet juiciness of strawberries, creating a refreshing treat perfect for gatherings or a simple indulgence.
I first made this for a summer picnic and the fact it did not require baking made it so much easier to transport. Now it is a favorite dessert that everyone asks for when strawberries are in season.
Ingredients
- Fresh strawberries: sliced about 300 grams, choose ripe and fragrant berries for the best flavor
- Granulated sugar: 38 grams, helps to macerate the strawberries and bring out their natural juices
- Fresh lemon juice: 15 milliliters, adds brightness and balances the sweetness
- Cream cheese: 227 grams softened, full fat recommended, the creamy base contributing richness and structure
- Strawberry preserves: 10 milliliters melted, intensifies the strawberry flavor
- Whipped cream: 360 milliliters, homemade preferred, light and airy texture is important so take time to whip properly
- Ladyfingers: approximately 24 or 200 grams, use fresh and dry for best soaking texture
- Orange juice: 60 milliliters, used to quickly soak the ladyfingers imparting a citrus note
- Pure vanilla extract: 10 milliliters, adds warmth and depth to the whipped cream mix
- Notes: When selecting your cream cheese pick one with good fat content for creaminess and flavor. Strawberries should be free from blemishes and fragrant for the best dessert result.
Instructions
- Prepare the Strawberries:
- In a medium bowl combine the sliced strawberries granulated sugar and fresh lemon juice. Toss gently to mix and then let this mixture sit uncovered for about 10 minutes so the strawberries release their juices and develop a syrup. This softens them slightly and enhances the berry flavor.
- Create the Cream Mixture:
- Beat the softened cream cheese with powdered sugar until smooth and lump free. In a separate bowl whisk the whipped cream preferably homemade and chilled with pure vanilla extract until stiff peaks form. Slowly and gently fold the whipped cream into the cream cheese mixture to keep it light fluffy and silky.
- Soak the Ladyfingers:
- Pour the orange juice into a shallow dish. Quickly dip each ladyfinger into the juice for one to two seconds on each side so they become moist but not soggy. Use fresh dry ladyfingers for the best texture and place them right into the serving dish to avoid over soaking.
- Assemble the Tiramisu:
- Lay a snug layer of soaked ladyfingers evenly on the bottom of your serving dish. Spread a layer of the cream cheese and whipped cream filling evenly on top. Add a layer of the macerated strawberries including some syrup for moisture and flavor. Repeat the layering process until all ingredients are used packing the layers tightly to maintain structure and a lovely presentation.
- Refrigerate to Set:
- Cover the tiramisu tightly with plastic wrap and refrigerate for at least 6 hours ideally overnight to let the flavors meld and the dessert firm up making it easier to slice. If needed this dessert can also be frozen by wrapping tightly and freezing for up to one month then thawed overnight in the fridge before serving.
This dessert has become a memory from summer cookouts with friends where everyone enjoyed the fresh fruity layers in the heat.
Stockage des restes
Place leftover tiramisu covered tightly with plastic wrap in the refrigerator. It will keep fresh for up to three days without losing moisture or texture. Avoid freezing once the tiramisu has been unwrapped and served as the texture can change.
Substitutions d'ingrédients
If cream cheese is not available mascarpone or ricotta mixed with a bit of cream can substitute but the texture will be slightly different. Use fresh orange juice instead of store bought if possible to avoid added sugars. For a dairy free version coconut cream whipped until fluffy can replace whipped cream.
Suggestions de service
Serve chilled in small clear glasses to show off the layers. Garnish with a fresh strawberry slice or a light dusting of powdered sugar. This also pairs beautifully with a crisp white wine or sparkling rosé for an elegant touch.
Chill the tiramisu well before serving for best texture and flavor. Enjoy with fresh strawberries or a glass of sparkling rosé.
